Production and quantification of cellulases from solid-state fermentation of agroindustrial residues.

Abstract : This study aimed to analyze and quantify the activity of the enzymes endoglucanase and total cellulases produced from solid-state fermentation of waste from processing of cocoa, mango and hog plum, using the fungus Aspergillus niger as inoculant. In order to determine the effects of enzyme production, an experiment was arranged in a factorial combination (3×5), with three levels of water content (40%, 50% and 60%) and five levels of fermentation time (24, 48, 72, 96 and 120 h). Fermentation was produced in a bacteriological incubator refrigerated at 30°C. It was found that the industrial residues are effective in the production of enzymes from solid-state fermentation, especially the endoglucanase from the fermentation of mango waste, which had enzymatic activity of 9.32 U/mL, and total cellulases from the fermentation of hog plum waste, which had enzymatic activity of 11.62 U/mL.
