Ascorbic acid concentration in mango (Mangifera indica L.) during pre- and post-harvest period.

Abstract : Three-year studies were made of the chemical composition of Langra and Dashehari mango cvs, assessed at 2-week intervals from the marble stage until harvest and subsequently at intervals of 2 days (at room temperature) or 7 days (at 10 deg C). In both cvs ascorbic acid content was high at the marble stage and declined at the start of the stone stage. In Langra, however, it then rose rapidly until harvest, whereas in Dashehari it continued to decline. The post-harvest ascorbic acid content of both cvs at room temperature declined; at 10 deg , however, that of Langra rose for about 2 weeks, whereas that of Dashehari remained low.
