Abstract : The aim of this study was to systematically investigate the antiradical capacity using 2,2-diphenyl-1-picrylhydrazyl radical scavenging assays, chelating activity and tyrosinase inhibitory property including solubility of the mango (Mangifera indica cultivar Chok-Anan) seed kernel extract comparing to methyl gallate (MG). The mango seed kernel extract (MSKE) showed significantly (P0.05) higher antiradical capacity and tyrosinase inhibitory activity than those of MG. The MSKE showed higher solubility in glycerol than in water contrast to MG. The emulsion-stabilizing properties of a MSKE and MG preparation in cosmetic emulsion were investigated using apparent viscosity and total phenolic content. Both phenolics affected emulsion stability toward high temperature storage and temperature cycling test. The apparent viscosity was increased differently for emulsion containing MSKE and MG comparing to base emulsion. Total phenolic content was decreased during storage at 45°C and 37°C. It showed that interaction between phenolics and emulsifier including other ingredients in emulsion systems is important for cosmetic emulsion stabilization.
