Abstract : The analysis of physico-chemical changes in Dusehri mango fruits at the room temperature revealed that the TSS, sugars and organoleptic rating of mango fruits increased upto 9 days of storage and declined thereafter. Similarly, a significant effect of storage was observed on per cent weight loss which showed an increasing trend throughout the study. However, the titratable acidity and ascorbic acid content showed a linear declining trend through out the stipulated storage period of 12 days. So, it can be concluded that Dusehri mango fruits can be stored upto 9 days at room temperature with good quality in terms of colour, taste and consumer acceptance.
