Abstract : This special issue contains review and research articles focusing on the nutritive value, physicochemical properties, quality production, bioreactor technology, optimum fermentation, preservation, and sensory evaluation of wines made from non-grape fruits such as apples, cashews, Kinnow mandarins, kiwifruits, litchi, mahua (Madhuca longifolia), mangoes, plums, and strawberries.
