Abstract : Drying of mango fruits requires training and specific equipment. This publication serves as a guide for managers of small and medium businesses that want to improve the operating conditions of their production units as well as for entrepreneurs and project leaders who want to create a drying unit for mangoes. It contains a synthesis of the work done by a multidisciplinary team of the Centre for International Cooperation in Agronomic Research for Development and its partners, including participants from Burkina Faso, pioneers in this area. The different stages of mango processing are presented and the analysis of each operation is detailed from the theoretical principles to the materials used.
