Abstract : The effects of processing on the trans-cis-isomerization of carotenoids, specifically ?-carotene, lycopene, lutein and zeaxanthin, are discussed, including the different aspects of carotenoid isomer analysis and bioavailability. Analyses done on the most widespread and popular sources of these nutrients such as carrot juice and mango slices are presented. The use of carotenoid cis-isomers in functional foods and nutritional supplements is also discussed.
