Abstract : Physicochemical changes during the growth and development of fruits of mango cultivars Fazli and Langra, grown in Ratua, Malda, West Bengal, India, were studied. Fruit growth in terms of length, breadth and weight increased until harvest maturity. The rate of increment was slow up to 45 days after anthesis (DAA), increased steadily up to 135 and 90 DAA in Fazli and Langra, respectively, then declined at later stages. Seed growth was also slow during the early stages of development. Peel weight showed a pronounced increase at 90 and 75 days after fruit set (DAFS) in Fazli and Langra, respectively. Stone weight markedly increased at 90 DAFS. The changes in pulp:fruit ratio in Fazli were not pronounced. In Langra, pulp:fruit ratio decreased slightly at 90 DAFS. The specific gravity of the fruit increased continuously until maturity in both cultivars. A sharp increase in total soluble solid content was observed at 135 DAFS in Fazli and 195 DAFS in Langra. The contents of total, reducing and nonreducing sugars increased with fruit maturity, and marked increases in the total sugar and nonreducing sugar contents were observed at 135 and 120 DAFS in Fazli and Langra, respectively. Fruit acidity increased during the early stages of development but significantly declined at harvest maturity. The sugar:acid ratio markedly increased from harvest maturity to ripening.
