Frozen fruit pulps: effects of the processing on crude fibre content.

Abstract : The effect of the process used to obtain frozen fruit pulp on the level of crude fibre was investigated, using ripe samples of acerola (Malpighia punicifolia), cashews, guavas, soursops (Annona muricata), mango, sweetsops (A. aguamoz A. squamosa]), pitanga (Eugenia pitanga), sapoti (Manilkara zapota) and grapes (Vitis vinifera). Results showed that freezing significantly reduced the crude fibre content (by 25-50%) of guavas, grapes, soursops, saoti, cashews, sweetsops and acerola.
