HPLC quantitation of major carotenoids of fresh and processed guava, mango and papaya.

Abstract : Samples of fresh guava, mango and papaya and some of their processed products were analysed by HPLC, using both external standardization and standard addition calibration techniques, to quantify the major carotenoids. The results obtained with the 2 calibration procedures did not differ significantly. ?-Carotene and lycopene concentrations in guava, ?-carotene in mango and ?-carotene, ?-cryptoxanthin and lycopene in papaya samples were consistent with those obtained previously with open column chromatography. The major problem in the HPLC quantitation of carotenoids is still obtaining and maintaining pure standards.
