Abstract : The processing qualities of ripe fruits of mango hybrids Mallika (Neelum X Dashehari) and Amrapali (Dashehari X Neelum) were compared with those of Dashehari. Mallika has more than twice the mean fruit weight (300 g) of Dashehari (140 g) and Amrapali (107 g), and has high 'cheek' (53.5%) and pulp (70.5%) contents, making Mallika suitable for canning as slices in syrup. Amrapali has 2-4 times the carotenoid pigment content of the other cultivars; its deeper colour gives it potential for juice production, and blending.
