Abstract : Mangoes imported from Trinidad were dipped individually in aqueous suspensions of the permeable sucrose ester coating material Pro-long at 0.75 or 1.0% w/v. They were then stored at around 25°C and 85-95% RH for up to 13 days, as were untreated control fruits. Treatment with 0.75% Pro-long significantly increased storage life (from about 7 days in controls to 13 days); it retarded ripening and reduced weight loss without adversely affecting the sensory quality. Treatment at 1.0% resulted in increased ethanol formation in the pulp of some mangoes.
