A study on physico-chemical changes during growth, maturity and ripening in mango.

Abstract : Fruits from fully grown mango trees of cvs Dashehari and Langra were used. The specific gravity of newly set fruits was high; it then decreased rapidly during the first month but increased again until maturity about 5 weeks later. TSS, sugars, ascorbic acid and pectin increased during growth but acidity decreased. Starch and dry matter, the best indices of maturity, increased steadily; the latter reached 19% in mature fruits of both cvs. Organoleptic tests showed a correlation between quality and TSS content. Dashehari was considered a better quality dessert cv. than Langra.
