Abstract : Controlled atmosphere (CA) storage of mangoes was studied at combinations of 4, 6 and 8% CO2 and 4, 6 and 8% O2 at 13°C. Weight loss, peel and flesh colour, flesh firmness, total soluble solids, pH and titratable acidity were evaluated. Ripening of Rad mangoes was delayed by CA for 2 weeks compared to untreated samples. Fruits stored at 4% CO2 and 6% O2 were acceptable to panellists.
