Abstract : The aim of this study was to determine the effect of post harvest hexanal vapour on quality characteristic of mango fruit cultivar banganapalli. Hexanal concentrations (600, 900 and 1200 ppm) and exposure durations (2, 4 and 6 h), storage conditions (atmospheric and cold storage) were changed and the results shown that the banganapalli mangoes treated with 600 ppm of hexanal vapour at 4 h kept under cold storage had better colour values and higher textural value than control samples. Physio chemical properties viz., pH, TSS, titrable acidity of hexanal vapour treated samples was found to be same as control.
