Chemical studies on internal breakdown in Alphonso mango (Mangifera indica Linn.).

Abstract : Internal breakdown was not related to the Ca content of the pulp from affected tissues. The conc. of K was low and P was high, compared with healthy pulp. Acetaldehyde accumulated in the breakdown pulp. The concs. of pyruvic acid and alpha -ketoglutaric acid and the activities of malic enzyme and pectin methylesterase were higher in the breakdown pulp than in healthy pulp.
