Food thickeners; milk gels MERCK & CO INC 5 Oct 1976 [8 Oct 1975] 41319/76 Heading A2B A thickener suitable for adding to a mixture of milk and an acidic food juice e.g. fruit juice comprises type B gelatin having an isoelectric point of pH 4.7-5.1, and carboxymethyl cellulose. A preferred composition comprises 15- 410/; gelatin, 1.5-4% CMC, 0.16-0.2% of an acidulent (e.g. fumaric, adipic, citric, tartaric or succinic acid), and a sweetener (e.g. 60-81% sugar or the equivalent sweetening amount of saccharin or an alkali or alkaline earth metal salt |
