Abstract : A ready-made mixed salad for sale in air-tight packaging contains at least three non-sterilized components one of which consists of mango, papaya, pineapple or pomaceous fruit or a mixture of several of these fruits and the mango or papaya taste predominates. These fruits are peeled and cored and are covered with a juice which contains sufficient vitamin C to inhibit enzymatic browning of the fruit pieces.
