| Abstract | : | PURPOSE: A manufacturing method of mango ketchup is provided to manufacture mango ketchup by using mango as a main ingredient. CONSTITUTION: Carabao mango is washed with water. Washed mango is sterilized with water chlorinated to 100PPM. The sterilized mango is peeled and mixed with water for 1 minute. Carboxy methylcellulose and sugar are added to the mango aqueous solution. The mixture is mixed with other spice and sterilized at a low temperature of 90-92deg.C for 10 minutes.
