Abstract : PURPOSE: A composition containing sucrose fatty acid ester is provided to prevent butter release and to enhance stability. CONSTITUTION: A composition for stabilizing a butter-containing composition contains 0.1-10 weight% of sucrose fatty acid ester as an active ingredient. The sucrose fatty acid ester is sucrose tetrastearate triacetate. The butter is shea butter, cocoa butter, mango butter, avocado butter, or jojoba butter.
